Rice and beans. That’s the bare minimum. You could survive on rice and beans and an Instant Pot for several years. Yes, that might be boring, but you could do it.
Now let’s add some other pantry staples to spice things up a bit.
1. I love the iPot packages from Chili Smith because they are all in one. The rice, the beans, the spices and the dried veggies. You can, of course, use less of the spice, add more of your favorite spice, add kale, potatoes, tempeh - whatever. However, these are so easy to use!
Just empty the contents into the Instant Pot and set it for High Pressure about 42 minutes and
that’s it.
2. Spices: I have a variety (probably too many) of spices and herbs. But they are so fun to experiment with! I eat a lot of potatoes, so I can create a lot of different recipes using different spices each time. The ones I use most regularly: No Salt Seasoning, Pepper, garlic powder, onion powder, onion flakes, Nutritional yeast, (not Brewer’s yeast), Sesame Seeds, Poppyseeds, Dill (I use dried when I forget to buy fresh dill), smoked paprika, and then a variety of seasonings for Mexican, Indian and Asian dishes.
3. Vinegars: Oh how I love flavored vinegars. And again; if your favorite staple is rice or potatoes or pasta, change up the vinegars so that you don’t get bored. I have used flavored vinegars in desserts, salads, etc. Here’s where I buy my vinegars: California Balsamics
7. Chopped tomatoes, tomato paste, tomato sauce. I like the Pomo brand because it comes in the cartons and not cans.
8. Mustard. An absolute MUST! As in MUSTard. A dinner I eat about 3 times a week: steamed potatoes, a can of peas, all mashed up and slathered in mustard. YUM!
9. Which then leads me to canned vegetables. I do love fresh vegetables but there is just something about a can of organic peas no salt added that makes my mouth water.
I’m going to assume you have a strainer, bowls, forks, spoons, can opener, stove, refrigerator, etc.

If you’re wanting to know what sort of food I ALWAYS have in the kitchen:
FRUIT and vegetables. I know, I probably should have listed VEGETABLES and fruit but it’s 106 here today and I could just survive on watermelon, grapes, pineapple bananas, raspberries, blueberries, cherries, etc.
I keep organic celery on hand because I try to drink celery juice every morning.
My freezer is stocked with organic frozen fruits and vegetables.
I always have gluten free oatmeal in the freezer.
Tahini is another staple item that I use frequently.
Rice cakes. I just need something crunchy once in awhile.
I love to bake and so I do have gluten free flours, cassava flour, coconut flour, coconut sugar, maple syrup, cacao powder, pure vanilla extract and vanilla powder, etc.
I keep Oat milk on hand for baking and for my grandson.
Remember, if it’s in your house, it’s in your mouth - so keep it out of your grocery cart!
